Black bean tacos (vegan)

The good thing with tacos is that you can eat them with whatever you want! Even though authentic Mexican tacos have meat, it's one of the easiest dish to make fully plant based!


So here's the recipe for my black bean tacos:


- Fresh corn tortillas (see recipe on the blog)

- 1 small can of black beans (you can use any type of bean, pinto, garbanzo...

- Cumin powder

- Chili powder

- Garlic flakes or powder

- Salt

- Olive oil

- 1 Avocado

- 1 lime

- 1/2 onion

- Cilantro


  • Drain your beans.

  • Prepare your garnish, chop your onions finely, slice your avocado and cut your lime.

  • If your tortillas aren't fresh, here's how you can reheat them. Heat up a pan on medium high heat. Dip your tortilla in cold water and cook it in the pan for 1 min on each side. Stack your tortillas, wrap them in a cloth and let them soften in their own steam. In the meantime prepare your beans.


  • Heat up some olive oil in a pan, add the chili powder, cumin, and garlic powder. If you are using garlic flakes (like I did here) add them at the end so that they don't burn.

  • Add your beans, a pinch of salt and cook them for a few minutes. Taste and add more salt or spices if needed.


  • Take a taco, add the beans, onions and the avocado slices.

  • Add the hot salsa, some cilantro and the juice of your limes.
