Hot Salsa (vegan)

Whether you put it in your tacos, or use it as a dip for tortilla chips, having a good fresh homemade salsa recipe at home is a must!
Here's what you need for a medium bowl of salsa :
- 6 tomatoes
- 1/2 onion (or 1/3 if it's a big onion)
- 1 jalapeno pepper (I like it spicy but try using half first and add more if needed)
- 3 garlic cloves
- The juice of 1/2 lemon
- 1 bunch of cilantro
- Salt
- chili flakes (optional)
Finely chop 3 tomatoes, the onion, jalapeno, garlic cloves and some cilantro. I am not the biggest fan of cilantro so I as you can see I only put a little bit, but feel free to put much more for a more authentic taste.
Put everything in a bowl, add some salt and mix.
Roast the 3 other tomatoes by putting them in a pan on a stove on medium-high heat until they turn black. Turn them and keep cooking them until they get that fire roasted flavor.
Wait for the tomatoes to cool down a bit and put them in your blender. I like to add some chili flakes for an extra spicy taste.
Blend the tomatoes and poor them over the fresh ingredients in the bowl.
Add the lemon juice. The mix of the roasted and fresh ingredients is what's going to make your salsa exceptional!
You can keep it in the fridge for a few days
